  • 4 large Portobello mushrooms
  • 1 cup fresh mozzarella, torn into pieces
  • 1/2 cup fresh basil leaves
  • 4 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 2 tbsp balsamic glaze
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Clean the Portobello mushrooms with a damp cloth and remove the stems. Place them caps-up on a parchment-lined baking sheet.
  2. In a small bowl, melt the butter with minced garlic until fragrant. Brush the mixture generously over each mushroom cap.
  3. Stuff each mushroom with torn mozzarella pieces and fresh basil leaves.
  4. Bake for about 20 minutes, until cheese is bubbly and slightly golden.
  5. Drizzle balsamic glaze over each stuffed mushroom before serving. Season with salt and pepper to enhance flavors.
