  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 4 cups low-sodium chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup diced tomatoes (for topping)
  • ½ cup sour cream (for topping)

Instructions

  1. In a large skillet over medium heat, brown the ground beef for about 5 minutes, breaking it up as it cooks.
  2. Add diced onions and minced garlic; sauté until translucent (about 3 minutes).
  3. Stir in uncooked rice to coat with juices and toast slightly.
  4. Pour in chicken broth and taco seasoning; stir well and bring to a simmer. Cover and cook for 15 minutes on low heat.
  5. Remove from heat, sprinkle cheddar cheese on top, cover again for an additional 5 minutes until melted.
  6. Serve with diced tomatoes and a dollop of sour cream.
