Description

Ingredients

  • Arborio rice
  • Fresh green peas
  • Vegetable broth
  • Onion
  • Garlic
  • Parmesan cheese
  • Butter
  • Olive oil
  • Fresh mint or basil
  • Salt & pepper

Instructions

  1. Heat olive oil in a large pan over medium heat. Sauté chopped onions until translucent, about 5 minutes.
  2. Add minced garlic and cook for 30 seconds. Stir in Arborio rice, coating each grain with oil for 2 minutes.
  3. Gradually add warmed vegetable broth one ladle at a time, stirring continuously until absorbed, about 20 minutes.
  4. When rice is al dente, fold in fresh peas and cook for an additional 3-4 minutes.
  5. Remove from heat and stir in butter and grated Parmesan until melted.
  6. Fold in chopped mint or basil just before serving.
