Description

  • 1 medium butternut squash (about 2 cups cubed)
  • 1 sheet puff pastry (thawed)
  • 1 medium sweet onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp cumin seeds (toasted)
  • ¼ cup fresh cilantro (chopped)
  • Salt and pepper to taste
  • 2 tbsp olive oil (for roasting and sautéing)
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube the butternut squash, toss with 1 tbsp olive oil and salt, then roast for about 25 minutes until tender.
  3. In a skillet, heat the remaining olive oil over medium heat. Sauté diced onions until translucent (about 5 minutes), add minced garlic and toasted cumin seeds, cooking until fragrant.
  4. In a bowl, combine roasted squash with sautéed onions, mash slightly for texture, then stir in chopped cilantro and season with salt and pepper.
  5. Roll out thawed puff pastry on a floured surface, cut into squares, fill each with the butternut squash mixture, fold diagonally into triangles, and pinch edges to seal.
  6. Brush each samsa with beaten egg for a golden finish and bake for 20-25 minutes until puffed and browned.
