Instructions
- Preheat oven to 400°F (200°C).
- Peel and cube the butternut squash, toss with 1 tbsp olive oil and salt, then roast for about 25 minutes until tender.
- In a skillet, heat the remaining olive oil over medium heat. Sauté diced onions until translucent (about 5 minutes), add minced garlic and toasted cumin seeds, cooking until fragrant.
- In a bowl, combine roasted squash with sautéed onions, mash slightly for texture, then stir in chopped cilantro and season with salt and pepper.
- Roll out thawed puff pastry on a floured surface, cut into squares, fill each with the butternut squash mixture, fold diagonally into triangles, and pinch edges to seal.
- Brush each samsa with beaten egg for a golden finish and bake for 20-25 minutes until puffed and browned.
