Ingredients

  • 1 cup Medjool dates (pitted)
  • 1/2 cup creamy almond butter
  • 2 tbsp coconut oil
  • 1 cup dairy-free chocolate chips
  • 1/4 tsp sea salt
  • 1/4 cup chopped almonds or peanuts (optional)

Instructions

  1. Soak Medjool dates in warm water for 10 minutes. Drain and blend with almond butter until smooth.
  2. Melt chocolate chips and coconut oil in a microwave-safe bowl until smooth. Stir well.
  3. Line a muffin tin with cupcake liners. Spoon melted chocolate into each liner, coating the bottom evenly. Chill for 10 minutes until set.
  4. Spread the date-almond butter mixture over the chilled chocolate layer, pressing down gently.
  5. Pour remaining melted chocolate over each cup, sprinkle with sea salt, and refrigerate for 30 minutes until set.
