  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup bell peppers, chopped (red and yellow)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 4 cups low-sodium vegetable broth
  • 1 cup corn (frozen or fresh)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until fragrant (about 3 minutes).
  2. Add chopped bell peppers and corn; cook for an additional 5 minutes.
  3. Stir in the black beans, kidney beans, and crushed tomatoes until well combined.
  4. Season with cumin, chili powder, salt, and pepper; mix well.
  5. Pour in vegetable broth and bring to a gentle boil. Reduce heat to low and simmer uncovered for about 30 minutes.
  6. Serve hot, garnished with fresh cilantro or avocado if desired.
