Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/3 cup pure honey
  • 3 tbsp hot sauce (sriracha recommended)
  • 1 tsp garlic powder
  • 2 tbsp extra virgin olive oil
  • 2 cups jasmine rice
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Prep your ingredients by chopping vegetables and measuring out the other ingredients.
  2. Marinate the chicken by combining honey, hot sauce, garlic powder, and soy sauce in a bowl. Add chicken breasts and let marinate for at least 30 minutes.
  3. Rinse jasmine rice under cold water until clear; cook according to package instructions.
  4. In a skillet over medium-high heat, add olive oil and sear marinated chicken until golden brown (about 5-7 minutes per side).
  5. During the last few minutes of cooking, add mixed vegetables to the skillet until tender-crisp.
  6. Fluff cooked rice with a fork, slice chicken into strips, and assemble bowls with rice topped with chicken and sautéed veggies.
