  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar

  • 1 cup buttermilk (or milk + 1 tbsp lemon juice)
  • 1/2 cup melted butter
  • 2 tsp mint extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease two round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine eggs, buttermilk, melted butter, and mint extract; blend well.
  4. Gradually fold wet ingredients into dry until just combined. Gently mix in the chocolate chips.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Let cakes cool for about 10 minutes before transferring to wire racks to cool completely.
  7. Frost with mint-flavored icing once cooled.
