Ingredients

Scale
  • 3 ripe bananas (mashed)
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter (melted)
  • 1 cup brown sugar (for caramel icing)
  • ½ cup heavy cream (for caramel icing)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a large bowl, mash the bananas until smooth. Mix in peanut butter, melted butter, eggs, granulated sugar, and brown sugar until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the banana mixture until just combined.
  4. Divide the batter evenly between the pans and bake for about 25–30 minutes or until a toothpick comes out clean.
  5. For the caramel icing, combine brown sugar and heavy cream in a saucepan over medium heat. Stir continuously until it reaches a gentle boil; let simmer for three minutes.
  6. Allow cakes to cool completely before removing from pans. Pour warm caramel icing over cooled cakes before serving.
