Method
Prepare the Turkey Tenderloin
Preheat your oven to 375°F (190°C). This ensures that the turkey cooks evenly and retains moisture.
In a mixing bowl, combine the olive oil, garlic powder, onion powder, dried thyme, dried rosemary, salt, black pepper, and lemon juice. Whisk until well blended.
Place the turkey tenderloin in a baking dish. Pour the marinade over the turkey, ensuring it is well coated. Let it marinate for at least 15 minutes to enhance the flavor.
Prepare the Vegetables
In a separate bowl, toss the mixed vegetables with olive oil, salt, and black pepper until evenly coated.
Spread the vegetables around the turkey in the baking dish. This allows them to roast alongside the turkey, absorbing its flavors.
Bake the Turkey and Vegetables
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the internal temperature of the turkey reaches 165°F (74°C). Use a meat thermometer to check the temperature.
Once cooked, remove the dish from the oven and let the turkey rest for 5 minutes before slicing. This helps the juices redistribute, making the meat more tender.
Serve
Slice the turkey tenderloin into medallions and serve with the roasted vegetables. Enjoy your healthy and delicious meal!
