Ingredients

For the Chicken
  • 1 lb boneless, skinless chicken breasts sliced thinly
  • 1 tbsp olive oil for cooking
  • 1 tsp garlic powder for seasoning
  • 1 tsp onion powder for seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
For the Vegetables
  • 1 medium green bell pepper sliced
  • 1 medium red bell pepper sliced
  • 1 medium yellow onion sliced
  • 1 tbsp olive oil for sautéing
For Assembly
  • 4 hoagie rolls submarine sandwich rolls toasted
  • 8 oz provolone cheese sliced

Method

Prepare the Chicken
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. This will help to sear the chicken, giving it a nice flavor.
  2. Season the sliced chicken breasts with garlic powder, onion powder, salt, and black pepper.
  3. Add the seasoned chicken to the hot skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink in the center. This ensures that the chicken is safe to eat and retains its juiciness.
  4. Once cooked, remove the chicken from the skillet and set aside.
Sauté the Vegetables
  1. In the same skillet, add another tablespoon of olive oil. This will help to cook the vegetables in the flavorful remnants of the chicken.
  2. Add the sliced green bell pepper, red bell pepper, and yellow onion to the skillet.
  3. Sauté the vegetables for about 5-7 minutes, or until they are softened and slightly caramelized. Stir occasionally to prevent burning.
Combine Chicken and Vegetables
  1. Return the cooked chicken to the skillet with the sautéed vegetables. Stir to combine and heat through for about 2-3 minutes.
  2. Place the sliced provolone cheese over the chicken and vegetable mixture, cover the skillet with a lid, and let it cook for another 2-3 minutes until the cheese is melted. This step ensures that the cheese is gooey and delicious.
Assemble the Sandwiches
  1. While the cheese is melting, preheat your oven to 350°F (175°C) if you prefer to toast the hoagie rolls.
  2. Slice the toasted hoagie rolls open lengthwise, being careful not to cut all the way through.
  3. Spoon the chicken and vegetable mixture into each hoagie roll.
  4. If desired, place the assembled sandwiches on a baking sheet and toast in the oven for 5 minutes for extra crispiness.
