Ingredients

For the Salad
  • 1 can chickpeas drained and rinsed
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely diced
  • 1/2 cup bell pepper diced (any color)
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled (optional)
For the Dressing
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method

Prepare the Salad
  1. In a large mixing bowl, combine the drained and rinsed chickpeas, diced cucumber, halved cherry tomatoes, finely diced red onion, diced bell pepper, and chopped parsley. Stir gently to mix the ingredients evenly.
  2. If using feta cheese, sprinkle it over the salad mixture.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, minced garlic, dijon mustard, salt, and black pepper until well combined. This emulsifies the dressing, ensuring a smooth consistency.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to coat all ingredients evenly. Allow the salad to sit for about 5 minutes to let the flavors meld.
  2. Serve immediately or refrigerate for up to 2 hours before serving for a chilled option.
