Ingredients

For the Meatloaf
  • 1 lb ground beef 80% lean for best flavor
  • 1 cup breadcrumbs plain or Italian seasoned
  • 1 large egg room temperature
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
For the Glaze
  • 1/4 cup ketchup
  • 1 tbsp brown sugar packed
  • 1 tsp apple cider vinegar

Method

Prepare the Meatloaf Mixture
  1. Preheat your oven to 350°F (175°C). This ensures that the meatloaf cooks evenly.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, chopped onion, minced garlic, Worcestershire sauce, ketchup, salt, black pepper, thyme, and oregano. Use your hands to mix gently until just combined. Overmixing can lead to a tough meatloaf.
  3. Shape the mixture into a loaf shape and place it in a greased loaf pan or on a baking sheet lined with parchment paper.
Prepare the Glaze
  1. In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar until smooth. This glaze adds a sweet and tangy flavor to the meatloaf.
  2. Spread the glaze evenly over the top of the meatloaf using a spatula or the back of a spoon.
Bake the Meatloaf
  1. Place the meatloaf in the preheated oven and bake for 60 minutes, or until the internal temperature reaches 160°F (70°C). Use a meat thermometer to check for doneness.
  2. Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps retain the juices.
Serve
  1. Slice the meatloaf into thick pieces and serve warm with your favorite sides, such as mashed potatoes and steamed vegetables.

Notes

For added moisture, you can mix in 1/4 cup of milk or beef broth into the meat mixture. Leftovers can be stored in the refrigerator for up to 3 days.
