Ingredients

For the Chicken
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces

  • 1 cup Alfredo sauce store-bought or homemade
  • 1 cup marinara sauce store-bought or homemade
For the Pasta
  • 8 oz penne pasta uncooked
  • 1 cup shredded mozzarella cheese for topping
  • 1/4 cup grated Parmesan cheese for topping
For Flavoring
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning or to taste
  • 1 tbsp olive oil for sautéing garlic

Method

Prepare the Chicken
  1. Season the chicken pieces with salt and black pepper. This will enhance the flavor of the chicken as it cooks.
  2. In a skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant, but not browned.
  3. Add the seasoned chicken to the skillet and cook for about 5-7 minutes until lightly browned. This step adds depth of flavor.
  4. Transfer the chicken to the crockpot.
Combine the Sauces
  1. In a bowl, mix together the Alfredo sauce and marinara sauce until well combined. This mixture will create a creamy and tangy flavor profile.
  2. Pour the sauce mixture over the chicken in the crockpot, ensuring all pieces are well coated.
Cook the Pasta
  1. Cover the crockpot and cook on low for 4 hours. This slow cooking allows the flavors to meld and the chicken to become tender.
  2. About 30 minutes before serving, cook the penne pasta according to package instructions until al dente. Drain and set aside.
Finish the Dish
  1. Once the chicken is cooked, stir in the cooked pasta into the crockpot, mixing gently to combine.
  2. Sprinkle shredded mozzarella and grated Parmesan cheese over the top. Cover and let it sit for an additional 10-15 minutes until the cheese melts.
  3. Serve hot, garnished with additional Parmesan cheese if desired.
