Ingredients

For the Pita Base
  • 4 pieces whole wheat pita bread Choose large pitas for a better base.
For the Toppings
  • 1 cup cherry tomatoes Halved.
  • 1 cup cucumber Diced.
  • 1 cup red onion Thinly sliced.
  • 1 cup feta cheese Crumbled.
  • 1 cup kalamata olives Pitted and halved.
  • 1 teaspoon dried oregano For seasoning.
For the Tzatziki Sauce
  • 1 cup Greek yogurt Use full-fat for creaminess.
  • 1 small cucumber Grated and excess water squeezed out.
  • 2 cloves garlic Minced.
  • 1 tablespoon olive oil Extra virgin for best flavor.
  • 1 tablespoon lemon juice Freshly squeezed.
  • 1 teaspoon dried dill Optional, for extra flavor.

Method

Prepare the Tzatziki Sauce
  1. In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and dried dill (if using). Stir well until all ingredients are fully incorporated. This sauce adds a refreshing flavor to the pizzas.
  2. Cover the bowl with plastic wrap and refrigerate for at least 10 minutes to allow the flavors to meld together.
Prepare the Pita Pizzas
  1. Preheat your oven to 400°F (200°C). This ensures the pitas will crisp up nicely.
  2. On a baking sheet, lay out the whole wheat pita breads. These will serve as the base for your pizzas.
  3. Evenly distribute the halved cherry tomatoes, diced cucumber, sliced red onion, crumbled feta cheese, and halved kalamata olives over each pita. Sprinkle dried oregano on top for added flavor.
  4. Place the baking sheet in the preheated oven and bake for about 8-10 minutes, or until the edges of the pita are crispy and the cheese is slightly melted.
Serve
  1. Remove the pita pizzas from the oven and let them cool for a minute. Serve warm with a generous dollop of the tzatziki sauce on top or on the side for dipping.
