1teaspoondried dillOptional, for extra flavor.
Method
Prepare the Tzatziki Sauce
In a mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and dried dill (if using). Stir well until all ingredients are fully incorporated. This sauce adds a refreshing flavor to the pizzas.
Cover the bowl with plastic wrap and refrigerate for at least 10 minutes to allow the flavors to meld together.
Prepare the Pita Pizzas
Preheat your oven to 400°F (200°C). This ensures the pitas will crisp up nicely.
On a baking sheet, lay out the whole wheat pita breads. These will serve as the base for your pizzas.
Evenly distribute the halved cherry tomatoes, diced cucumber, sliced red onion, crumbled feta cheese, and halved kalamata olives over each pita. Sprinkle dried oregano on top for added flavor.
Place the baking sheet in the preheated oven and bake for about 8-10 minutes, or until the edges of the pita are crispy and the cheese is slightly melted.
Serve
Remove the pita pizzas from the oven and let them cool for a minute. Serve warm with a generous dollop of the tzatziki sauce on top or on the side for dipping.
These Greek Pita Pizzas are versatile; feel free to add or substitute any of your favorite toppings such as bell peppers, artichokes, or grilled chicken for a heartier meal.
