Ingredients

For the Chicken Marinade
  • 1 pound boneless, skinless chicken breasts cut into 1-inch cubes
  • 3 tablespoons olive oil extra virgin for best flavor
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano or 1 tablespoon fresh oregano, chopped
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground for best flavor
For the Skewers
  • 1 bell pepper red or yellow cut into 1-inch pieces
  • 1 medium red onion cut into wedges
  • 1 zucchini medium sliced into thick rounds
  • 1 cup cherry tomatoes whole

Method

Prepare the Marinade
  1. In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper until well combined. This marinade will infuse the chicken with flavor and keep it moist during grilling.
Marinate the Chicken
  1. Add the cubed chicken to the marinade, ensuring all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. This step is crucial for ensuring your skewers hold together during cooking.
  2. Once marinated, thread the chicken, bell pepper, onion, zucchini, and cherry tomatoes onto the skewers, alternating between the chicken and vegetables for a colorful presentation.
Grill the Skewers
  1. Preheat your grill or grill pan over medium-high heat. Once hot, place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F) and the vegetables are tender.
Serve
  1. Remove the skewers from the grill and let them rest for a few minutes before serving. This allows the juices to redistribute, ensuring juicy chicken. Serve with your favorite dipping sauce or a side salad.
