Ingredients

For the Potato Salad
  • 2 pounds Yukon Gold Potatoes peeled and cubed
  • 1 cup Mayonnaise preferably full-fat for creaminess
  • 2 tablespoons Dijon Mustard adds tanginess
  • 1 tablespoon Apple Cider Vinegar for acidity
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Black Pepper freshly ground
  • 1 cup Celery finely chopped
  • 1/2 cup Red Onion finely chopped
  • 1 cup Hard-Boiled Eggs chopped, about 2 large eggs
  • 1/4 cup Fresh Parsley chopped, for garnish

Method

Prepare the Potatoes
  1. Place the peeled and cubed Yukon Gold potatoes in a large pot and cover them with cold water. This helps them cook evenly.
  2. Add a pinch of salt to the water to season the potatoes as they cook.
  3. Bring the water to a boil over medium-high heat, then reduce the heat to a simmer. Cook the potatoes for about 15-20 minutes, or until they are fork-tender.
  4. Once cooked, drain the potatoes in a colander and let them cool for about 10 minutes.
Make the Dressing
  1. In a mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper. Whisk until smooth and well combined.
  2. Taste the dressing and adjust the seasoning if necessary. This dressing will add creaminess and flavor to the salad.
Combine Ingredients
  1. In a large mixing bowl, add the cooled potatoes, chopped celery, red onion, and hard-boiled eggs.
  2. Pour the dressing over the potato mixture and gently fold everything together using a spatula. Be careful not to mash the potatoes.
  3. Once everything is well coated, taste and adjust seasoning if needed.
Chill and Serve
  1. Cover the potato salad with plastic wrap and refrigerate for at least 1 hour before serving. This allows the flavors to meld together.
  2. Before serving, garnish with chopped fresh parsley for a pop of color and freshness.
  3. Serve chilled and enjoy your homemade potato salad!
