Method
Prepare the Donut Batter
Preheat your oven to 350°F (175°C). Grease your donut pan with non-stick spray or butter to prevent sticking.
In a large mixing bowl, whisk together the sifted flour, granulated sugar, baking powder, baking soda, and salt until well combined. This ensures even distribution of the leavening agents.
In another bowl, whisk the egg, buttermilk, melted butter, lemon juice, lemon zest, and crushed lavender until smooth. The buttermilk adds moisture and a slight tang, while the lemon and lavender provide flavor.
Pour the wet ingredients into the dry ingredients and gently fold them together using a rubber spatula until just combined. Be careful not to overmix, as this can lead to dense donuts.
Transfer the batter to a piping bag or a zip-top bag with a corner snipped off. This will make it easier to fill the donut pan evenly.
Fill each cavity of the donut pan about 2/3 full with batter. This allows room for the donuts to rise without overflowing.
Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean. The donuts should be lightly golden on top.
Once baked, remove the donuts from the oven and let them cool in the pan for about 5 minutes before transferring them to a cooling rack to cool completely.
Make the Glaze
In a medium bowl, combine the sifted powdered sugar and lemon juice. Whisk until smooth. If the glaze is too thick, add milk a little at a time until you reach your desired consistency.
Once the donuts are completely cooled, dip the top of each donut into the glaze, allowing any excess to drip off.
Sprinkle a pinch of crushed culinary lavender on top of the glaze for a beautiful presentation and added flavor.
Let the glaze set for about 10 minutes before serving. Enjoy your Lemon Lavender Donuts with a cup of tea or coffee!
These donuts are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days. For a more intense lavender flavor, increase the amount of culinary lavender in the batter or glaze, but be cautious as it can become overpowering.
