Ingredients

For the Salad
  • 2 cups fresh strawberries hulled and sliced
  • 3 cups seedless watermelon cubed
  • 1 cup cucumber diced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
For the Honey Lime Vinaigrette
  • 3 tablespoons honey preferably raw
  • 2 tablespoons fresh lime juice about 1 lime
  • 1 tablespoon olive oil extra virgin
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method

Prepare the Salad
  1. In a large mixing bowl, combine the sliced strawberries, cubed watermelon, diced cucumber, crumbled feta cheese, and chopped mint leaves. Gently toss the ingredients together using a spatula to avoid bruising the fruit.
Make the Honey Lime Vinaigrette
  1. In a small bowl, whisk together the honey, fresh lime juice, olive oil, salt, and black pepper until well combined. This vinaigrette will add a sweet and tangy flavor that complements the fruits.
Assemble the Salad
  1. Drizzle the honey lime vinaigrette over the salad mixture in the large bowl. Gently toss again to ensure all the ingredients are evenly coated with the dressing.
  2. Transfer the salad to a serving platter. Optionally, garnish with additional mint leaves for presentation.
Serve
  1. Serve immediately for the freshest taste. This salad is best enjoyed chilled and can be stored in the refrigerator for up to 2 hours before serving.
