Method
Prepare the Pasta
Bring a large pot of salted water to a boil. This helps to season the pasta as it cooks.
Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.
Reserve 1 cup of pasta water, then drain the pasta in a colander and set aside.
Roast the Tomatoes
Preheat your oven to 400°F (200°C). This high temperature will help caramelize the tomatoes.
On a baking sheet, combine the halved cherry tomatoes, olive oil, dried oregano, salt, and black pepper. Toss to coat evenly.
Spread the tomatoes in a single layer and roast in the preheated oven for 20-25 minutes, or until they are soft and slightly charred.
Make the Sauce
In a large skillet over medium heat, add the minced garlic and sauté for about 1 minute until fragrant. This releases the flavor of the garlic.
Add the crumbled feta cheese and heavy cream to the skillet. Stir gently until the feta begins to melt and the mixture is creamy.
If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
Combine and Serve
Add the cooked pasta to the skillet with the feta sauce. Toss to combine, ensuring the pasta is well coated.
Gently fold in the roasted tomatoes, being careful not to break them apart.
Serve immediately, garnished with fresh basil and additional feta if desired.
Notes
For added flavor, consider adding red pepper flakes for heat or a squeeze of lemon juice for brightness.
