Method
Prepare the Meatballs
Preheat your oven to 400°F (200°C). This ensures the meatballs cook evenly and develop a nice crust.
In a large mixing bowl, combine ground beef, bread crumbs, parmesan cheese, egg, minced garlic, oregano, basil, salt, and pepper.
Mix gently with your hands until just combined. Overmixing can lead to tough meatballs.
Form the mixture into 1.5-inch meatballs and place them on a baking sheet lined with parchment paper.
Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 160°F (71°C).
Make the Marinara Sauce
While the meatballs are baking, heat olive oil in a saucepan over medium heat.
Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
Stir in crushed tomatoes, oregano, basil, salt, and pepper. Bring to a simmer.
Reduce heat to low and let the sauce simmer for about 15 minutes, stirring occasionally.
Assemble the Subs
Once the meatballs are done, remove them from the oven and add them to the marinara sauce, gently coating them.
Slice the sub rolls open, but not all the way through, creating a pocket.
Place 3-4 meatballs in each sub roll and spoon additional marinara sauce over the top.
Sprinkle shredded mozzarella cheese generously over the meatballs.
Place the assembled subs on a baking sheet and return to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven, garnish with fresh basil, and serve immediately.
Notes
These meatball subs are best served fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
